Kitchens have more specific electrical requirements than any other room in a house, and the reason is that they concentrate a large number of high draw appliances into a small area with water present.

The core requirement is that countertop receptacles are served by at least two dedicated small appliance branch circuits. These circuits serve the countertop, the dining area and the refrigerator space, and they are not permitted to serve lighting or other rooms. The intention is that a toaster and a kettle running at once do not trip a circuit that also serves the lights.

Receptacle spacing along the counter is specified so that no point along the usable counter is farther than a set distance from a receptacle. In practice this produces a receptacle every few feet, which is why kitchen counters have so many outlets compared with other rooms.

Ground fault protection is required for receptacles serving countertop surfaces, and the requirement has expanded over successive code cycles to cover more of the kitchen. Newer requirements have extended ground fault protection to certain appliance outlets as well, which has caused some friction with appliances whose electronics trip the protection.

Islands and peninsulas have their own rules, which have changed notably in recent cycles, moving away from receptacles installed in the face below the counter because of the hazard of cords hanging down.

Dedicated circuits are required for specific fixed appliances. Dishwashers, disposals, built-in microwaves and electric ranges each need their own supply sized to their nameplate.

Arc fault protection requirements now generally include kitchens, which combined with ground fault requirements means dual function devices are common in new kitchen work.

All of this matters most during a renovation. A kitchen updated cosmetically may still be running on the wiring it had when the house was built, with two circuits doing the work of eight. Adding an induction range or a second oven to that is where problems surface.

When planning a renovation, the electrical scope is usually decided by the appliance list, so settling the appliances early avoids rework.
